Procuring of fruits-

Ratnagiri is district placed on western coast of southern India in stste Maharashtra. Climatic conditions and typically red coloured soil in this area gives one of the best and rarest quality Alphonso Mangoes which are unique in taste ,colour and flavor. Since our factory is situated in this area mangoes of this category are procured and used for processing .

Processing of fruits-

Ripning of fruits- properly matured fruits are selected from procured mangoes and stacked in pvc crates for ripning. Fruits are allowed to ripen naturally in these crates . Depending on the maturity of the procured fruits eight to twelve days are required for the fruits to ripe properly.

Properly riped fruits are then first washed with potassium permangnet water then with simple water in fruit washing machine and passed over conveyer belt to next table for removal of its

The cleaned and washed fruits are then transferred to pulping unit where pilings and seeds of mango fruits are separated from pulp , pulp of these mangoes is then collected in large vats and sent for the process of pasturisation .

Pasturisation of pulp-

Pulp collected in vats is transferred to jacketed vessels where it is boiled upto the temp. of 95 to 100 degree Celsius .the pulp is then allowed to boil for 15 to 20 minutes and then transferred to metal containers which are mechanically sealed on automaticsealing machine . The containers in which pulp is sealed are pasturised prior to the filling of pulp inthem. Container cans are then sent ahead for process of rhetorting . this process takes 15 to 20 minutes and

subsequent cooling takes another couple of hours for the process to complete.

The cans of pulp thus manufactured are ready for marketing after appropriate labling and packing.
